Vietnamese Lemongrass Marinated Beef Rice Noodles Salad

  • 3 tbls soy sauce Added to
  • 2 tbls fish sauce Added to

  • 1 tablespoon vegetable oil Added to
  • 200 g thin rice noodles Added to
  • 2 cups mixed salad greens Added to
  • 1 cucumber, thinly sliced Added to
  • 2 cups bean sprouts Added to
  • Fresh mint and cilantro (for garnishing) Added to
  • Roasted peanuts (for garnishing) Added to

For the dressing:

  • 2 limes, juiced Added to
  • 2 tbls fish sauce Added to
  • 1 tablespoon sugar Added to
  • 1 chili padi or red chili, finely chopped Added to

1. Step

Start by marinating the beef. Combine minced lemongrass, garlic, soy sauce, fish sauce, and sugar in a bowl. Add beef and let it marinate at least 15 minutes, best if overnight.

2. Step

In a large pan, heat vegetable oil over medium-high heat. Add the marinated beef and stir-fry until it is cooked, about 5-7 minutes. Remove from heat.

3. Step

Prepare the rice noodles as per the package instructions. Set aside.

4. Step

To assemble the salad, divide the mixed greens, cucumber, bean sprouts and rice noodles equally among four bowls. Top with cooked beef. Garnish with mint, cilantro, and roasted peanuts.

5. Step

For the dressing, mix lime juice, fish sauce, sugar and chopped chili in a small bowl. Stir until sugar dissolves.

6. Step

Drizzle the dressing over each salad before serving.
