- 550 g green figs
- 175 g brown sugar
- 1⁄2 lemon
Remove the stems and the base of the figs. Chop and set aside in a bowl.
Add three quarts of brown sugar and leave to macerate in the fridge overnight.
Put a saucepan on the heat and add the macerated figs. Cook for 20 minutes, stirring occasionally. Add the brown sugar, mix and cook for a further 15 minutes. Squeeze in the lemon, stir and cook for 10 minutes.
Remove from the heat and transfer the jam to a blender. Blend.
Transfer the jam to an airtight jar. Serve the green fig jam as a spread on toast and crackers!
