Ingredients

- 12 ripe tomatoes
- 1⁄2 onion
- 3 cloves garlic
- Fresh parsley
- Extra Virgin Olive Oil
- salt
- black pepper
- dry spices
- 1⁄2 tsp sugar

Directions
1. Step
Cut the tomatoes into thick slices and place them in a baking tray.
2. Step
Cut the onion into quarters, a little thinner than the tomatoes.
3. Step
Place the parsley leaves on top of the tomatoes.
4. Step
Add the three crushed garlic cloves without removing the skin.
5. Step
Water with a few drops of extra virgin olive oil. Add salt and pepper and add half a teaspoon of sugar to reduce the acidity of the tomatoes.
6. Step
Bake for 40 minutes at 180º making sure it does not burn.
7. Step
Once baked, remove the thicker skins from the tomatoes and put everything in a blender or food processor. Blend at maximum speed for a couple of minutes.
8. Step
The roasted tomato sauce is now ready. Now you can use it for pasta or other dishes. Enjoy!
