Shrimp and Greens Salad with Yogurt-Avocado Dressing
A healthy shrimp and greens salad recipe. You’ll need a batch of Yogurt-Avocado Dressing for tossing.

- 1 lb medium shrimp, peeled and deveined
- juice of 1 lime
- Kosher salt
- 1 tbl rapeseed oil
- 6 cup chopped butter lettuce
- 1⁄3 cup yogurt-avocado dressing, plus more for passing
Toss the shrimp with the juice of lime and sprinkle with salt. Set aside for 0 minutes. In a frying pan over high heat, warm the oil. Add the shrimp and sear until just cooked through, about 4 minutes.
Place the salad greens in a wide, shallow salad bowl, drizzle with a little dressing, and toss to coat. Scatter with the shrimp. Serve, passing additional dressing on the side.
