- 250 g cherry tomatoes
- 100 g pitted black olives
- 2 cloves garlic
- 1 cup fresh basil leaves
- 100 g Parmesan cheese
- 500 g cooked pasta
- fresh basil
- 4 tablespoon Extra Virgin Olive Oil
- 1 cup pasta cooking water
Cook the pasta in plenty of salted water. When the pasta is ready, drain it.
Heat the oil in a large frying pan. Chop the garlic cloves and sauté them.
Halve the cherry tomato. Add them to the pan and sauté them with the garlic. Season with salt and pepper and add the dried basil.
Add the sliced black olives and the glass of water from cooking the pasta. Stir and put a lid on the pan. Leave to cook for 10 minutes over moderate heat.
Grate half of the cheese and add to the sauce. Then add the cooked pasta and mix everything together. With the heat off, mix in the fresh basil leaves.
Serve the pasta and grate more cheese on top.
