  • 70 g salt Added to

  • 5 g dill Added to
  • 1 tablespoon pink peppercorns Added to

Directions

1. Step

Crush the pink pepper with a pestle and mortar. In a bowl, mix the sugar, salt, pink pepper and dill.

2. Step

In a deep bowl, pour half of this mixture, place the skinned and boned salmon loin on top and cover with the rest of the mixture. Cover the bowl with cling film. Refrigerate for 24 hours.

3. Step

Remove the water that has formed and cover again and refrigerate for a further 24 hours.

4. Step

After this time, wash the salmon fillet thoroughly under running water to remove excess salt.

5. Step

Cut the salmon fillet into thin slices.

6. Step

Sprinkle some pink pepper and a little dill on top and, if you like, you can sprinkle it with a little lemon juice. That's all! Enjoy.
