This easy recipe teaches how to make the best homemade Baked Brussels sprouts with apples, a healthy vegan dish that can't be missed!
- 200 g Brussels sprouts
- 1 apple
- 2 tsp Extra Virgin Olive Oil
- black pepper
- 1 lemon
- 1 clove garlic
- 1 tablespoon Dijon mustard
- 1 tsp apple cider vinegar
- 1 tsp curry powder
- 1 tsp chopped fresh ginger
Cut off the ends of the Brussels sprouts and remove the outer leaves.
Peel the apple, remove the core and cut it in half. Dice one half.
Place the Brussels sprouts and diced apple in an ovenproof dish. Add a pinch of salt and pepper to taste and drizzle with a drizzle of olive oil.
Bake with the oven preheated at 200°C for about 35 minutes, until the sprouts are crisp.
For the sauce, coarsely dice the reserved half apple. Place the ginger, curry, peeled garlic clove, mustard, squeezed lemon juice, apple cider vinegar and apple in the blender. Blend everything in a blender until you have a homogeneous sauce.
Serve the baked Brussels sprouts with apple and cover with the sauce. Enjoy!
