  • 200 gms of fresh spinach Added to
  • 1 Cup of ricotta cheese Added to
  • 2 cloves of garlic, minced Added to
  • 2 tbls of olive oil Added to

  • A pinch of nutmeg Added to
  • 1 Cup of Parmesan Cheese, grated Added to
  • Zest of one lemon Added to
  • Fresh basil for garnishing Added to

1. Step

Cook your pasta in a large pot of salted boiling water according to the instructions on the package until it's al dente. Drain it and set it aside.

2. Step

While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for 1-2 minutes, until it becomes fragrant.

3. Step

Add the fresh spinach to the pan and cook it until it wilts. This should take about 2-3 minutes.

4. Step

Reduce the heat to low and stir in the ricotta cheese, lemon zest, and a pinch of nutmeg. Season with salt and pepper to taste.

5. Step

Stir in the drained pasta and mix it until it's fully coated with the spinach and ricotta mixture.

6. Step

Remove the pan from the heat and mix in half of the grated Parmesan cheese.

7. Step
