Authentic Barbecue Korean Beef Short Ribs

If there's a dish that brings me fond memories of dining in authentic Korean restaurants, it would be the Korean Beef Ribs. The incredibly tender and flavorful ribs, complimented by sweet and savory marinade: it's a recipe that requires patience, but trust me, the end result is totally worth it. Voted as a family favourite in our household, I've perfected the marinade and learned the best way to cook these ribs over the years.

Directions

150 min.
1. Step

Begin by placing your beef ribs in a large bowl and pouring cold water over them. Let these soak for about an hour to draw out any remaining blood, as this can make your ribs come out with a bitter taste.

2. Step

After soaking, rinse your ribs well under running water, then pat dry. This step is crucial to ensure that your marinade will adhere effectively to the meat.

3. Step

In another bowl, mix together your soy sauce, brown sugar, mirin, minced garlic, sliced onion, scallions, grated ginger, and pear. I highly recommend not skipping the pear - it's a secret ingredient that adds a subtle sweetness and helps tenderize the meat.

4. Step

Add your ribs into your mixed marinade, ensuring that every piece is well coated. Allow these to marinate in the refrigerator for at least an hour. For maximum flavor, I prefer to marinate them overnight.

5. Step

Once your ribs have marinated, preheat your grill on medium heat. If you're having a tough weather, you can also use an indoor grill pan or bake them in the oven at 375°F.

6. Step

Grill your ribs for 5-7 mins on each side. The key here is patience - avoid moving them around too much. They should be nicely caramelized and have beautiful grill marks.

7. Step

Drizzle them with sesame oil, sprinkle a little black pepper, and garnish with sesame seeds before serving. Enjoy these flavorful and aromatic ribs with hot steamed rice for a complete meal.
