- 230 g pasta
- 150 g smoked salmon
- 8 cherry tomatoes
- Chopped fresh parsley
- 1⁄2 red onion
- cedar peel
- fresh thyme
- 1⁄2 glass dry white wine
- salt and pepper
- Extra Virgin Olive Oil
- coarse salt
Finely chop the onion and place it in a large frying pan with a drizzle of extra virgin olive oil. Then, brown the onion over very low heat for about 2 minutes.
Cut the salmon into large pieces.
Add the salmon to the sauté and mix everything together.
Cook the pasta in boiling water with coarse salt.
Season the seasoning with half a glass of dry white wine or sparkling wine and increase the heat to evaporate the alcoholic part of the wine.
Cut the tomatoes in half, then add them to the seasoning. Add salt and cook for 2 to 3 minutes, stirring occasionally until creamy.
Add the fresh thyme and a pinch of pepper, then turn off the heat.
Then add the remaining salmon to the pasta and continue to stir well.
Sprinkle a little pepper, turn off the heat and add some chopped fresh parsley.
Serve the pasta with salmon and complete the dish with the cedar or lemon zest and serve. Enjoy your meal!
