- 2 cups cooked brown rice
- 200 g cooked chicken breasts
- 100 g green asparagus
- 100 g cherry tomatoes
- 50 g sweet corn
For the vinaigrette
- 2 tablespoon mayonnaise
- 2 tablespoon extra virgin olive oil
- 1 tablespoon vinegar
- 1 pinch cumin
Remove the stalks from the asparagus and cook for 5 minutes in a pan with plenty of hot water. After this time, remove from the pan and leave to cool.
Chop the asparagus, dice the chicken and cut the cherry tomatoes in halves or quarters, as you prefer.
To make the vinaigrette, mix the mayonnaise with extra virgin olive oil and vinegar. Stir well and finally add a pinch of cumin. Mix well.
To assemble the salad, prepare a base with brown rice and add the chicken, corn and cherry tomatoes. Stir to mix all the ingredients together and serve with the vinaigrette.
