- 600 g carrots
- 30 ml olive oil
- 15 ml honey or maple syrup
- 30 ml tamari
- 1 tablespoon grated ginger
- 1 tablespoon grated garlic
Cut the carrots in half. Prepare a casserole dish and add the carrots along with the olive oil. Mix well to distribute the oil evenly over the carrots.
Place in the preheated oven to 200°C and roast for about 20 minutes.
Mix the maple syrup or honey, tamari, ginger and garlic in a bowl and set aside.
After the baking time, remove the carrots from the oven and increase the temperature to 225°C. Pour the glaze over the carrots and mix with tongs until everything is well distributed. Place back in the oven and roast for another 10 minutes.
Remove from the oven and garnish with carrot greens or fresh coriander. Serve neat or with another dish of your choice. Best fresh.
