- 4 kg peaches
- 21⁄2 l water
- 1 kg sugar
- 1 stick vanilla
Dilute the sugar in the water and mix very well; add the vanilla pod together with the seeds. Bring to a boil.
Peel and pit the peaches and separate them into halves.
Immerse the peach halves in the boiling syrup and leave to cool.
Sterilise canning jars by boiling them in a pot of water for 15 minutes. Remove the peaches and fill the jars leaving about 4 cm free.
Boil the syrup and strain it over the peaches until it covers them perfectly.
Close the jars and place them upside down in a dark place for storage.
