Put the rice noodles in water for 20 minutes. Using hot water, 5 minutes is enough time.

Chop the garlic and cut the onion into julienne strips.

Cut the carrot into sticks.

Cut the cabbage into small pieces.

Whisk the eggs in a bowl and fry them in a frying pan with a little vegetable oil, breaking them into small pieces. Remove and set aside for later.

In the same frying pan, fry the prawns and set them aside with the egg.

Add a little more oil and fry the garlic.

When it starts to smell good, add the onion, the carrot, and the cabbage. Sauté for a minute.

Add the hydrated rice noodles.

Add light soy sauce, salt, sugar, and oyster sauce.

Mix well until the colour is homogeneous.

Add the egg and prawns.

Add the soybean sprouts, the green part of the onion, sesame oil, white pepper and a dash of Chinese rice wine.

Sauté it and mix everything well. Now is ready to serve.
