Fresh Healthy Pear Salad

This lovely Fresh Pear Salad is a perfect choice for a light lunch or a refreshing side dish.

  • 2 large ripe pears, cored and thinly sliced Added to
  • 8 cups mixed salad greens Added to
  • 12 Cup crumbled blue cheese Added to
  • 12 Cup chopped walnuts, toasted Added to
  • 12 Cup dried cranberries Added to

For the Vinaigrette:

  • 14 Cup Extra Virgin Olive Oil Added to
  • 2 tbls apple cider vinegar Added to
  • 1 tablespoon Between Added to
  • Salt and freshly ground black pepper to taste Added to

1. Step

Start by preparing the vinaigrette. In a small bowl, whisk together the olive oil, apple cider vinegar, and honey until they're well mixed. My experience has taught me that using good quality extra virgin olive oil and raw organic honey significantly enhances the flavor of the vinaigrette.

2. Step

Season with salt and freshly ground black pepper to your preference, remembering that the blue cheese will add saltiness to the salad.

3. Step

After your vinaigrette is mixed, set it aside to let the flavors meld together.

4. Step

In a large bowl, combine salad greens, sliced pears, crumbled blue cheese, toasted walnuts, and dried cranberries. I've found that toasting the walnuts before adding them to the salad brings out their flavor and makes them crunchier.

5. Step

Drizzle the prepared vinaigrette over the salad. Toss gently until everything is well-coated. Be sure to dress the salad right before serving to prevent the greens from becoming soggy.

6. Step

Serve immediately and enjoy the delicious harmony of flavors!
