- 200 g Wagyu
- 4 radishes
- 1 carrot
- 1 spring onion
- sesame seeds
- 2 tablespoon soy sauce
- 1 tablespoon sushi vinegar
- 1 tablespoon lime juice
- 2 tablespoon miso
- 1 clove garlic
- 1 tsp ginger
Lightly season the Wagyu with salt and pepper and sear it briefly in a frying pan without oil for 45 seconds. Remove the meat from the pan and let it rest for a while.
Mix soy sauce, sushi vinegar and lime juice. Then add the miso paste, a pressed clove of garlic and grated ginger.
Peel the carrot and cut it into very thin slices. Thinly slice the radishes and spring onion. Marinate the greens in a spoonful of sushi vinegar.
Cut the Wagyu meat into thin slices. Arrange them nicely on a plate and finish with the miso dressing, the crunchy vegetables and some sesame seeds. Enjoy!
